L-alanine is an organic compound. Formerly known as alanine, its molecular formula is C3H7NO2. Colorless to white crystalline powder. Soluble in water and ethanol, insoluble in ether or acetone.

L-Alanine was separated for the first time in 1879. Birds and mammals can synthesize alanine from pyruvate, which is the result of the breakdown of sugars in food. Therefore, alanine is not an essential amino acid in these animals.

L-Alanine is mainly used in biochemical research, tissue culture, liver function determination, condiments, etc. It can enhance the seasoning effect of condiments, and can also be used as an acidity corrector to improve the acidity of organic acids.
